Zaatar Quiche (Serves 6) Ingredients : - 300 g Bulgarian cheese (cow's milk) - 200 g grated French Emmental - 200 g grated mozzarella - 3 eggs - 1 ready-to-roll shortcrust pastry (or homemade shortcrust pastry) - 200 ml liquid fresh cream - 2 bunches of fresh zaatar, washed, dried and leaves removed - Salt, black pepper, white pepper and nutmeg Instructions: 1. Preheat the oven to 180°C (350°F). 2. Roll out the shortcrust pastry into a previously buttered tart pan, then refrigerate for 1 hour. 3. Prebake the pastry in the oven for 10 minutes (directly after taking it out of the fridge). 4. In a large bowl, mix together the eggs, cream and spices. 5. In another bowl, crumble the Bulgarian cheese and mix well with the other two cheeses until you achieve a uniform mixture. 6. After removing the tart pan from the oven, line the bottom of the pastry with the zaatar leaves, then fill it with the cheese mixture. Pour the cream and egg mixture over it. 7. Bake at 200°C (400°F) for about 20 minutes, or until the surface of the quiche is golden brown.
